On topic. I think you should just chill out. Think about interesting stuff that's going on with you or whatever. Think about your passions, that's what you can talk most enthusiastically about. Just beware it isn't boring to the average human (like some Computer Scienctific optimality issue with multiple mysql insert statement implementation).
Should the subject switch be very smooth? I don't know. If she isn't into you, the smoothness of your hop (or the next subject) won't blow her panties off. I she likes you, she won't care about the edgy transition, as long as the conversation stays at least socially acceptably interesting.

I tried just switching on ramble for a while w/ a really cute french girl on the street today, who had apparently just arrived in the country. We'll see if I get a reply to my e-mail...

Me, personally, I get irritated by back-and-forth subject hopping when the subject isn't "digested". Maybe it's my engineering mind.

Isn't it as good to just talk about a topic and when it fades, switch to another one. I've always done this.

No. When a conversational thread with a total stranger dies, it often gets awkward and they leave.

Well, yeah. But you don't have to wait until it dies. Just from the moment you notice the subject is starting to run out of supplies, you switch. You just need to have a next topic already "loaded" in your head, ready to pop up.
