I don't think sex is very interesting.
Of course it feels good, we are driven to do it. I get why it's such a high priority. But that doesn't make it interesting.
It's on the level of eating food for me. Can't avoid it, you can develop it into an art form, but it's still serves the same basic function. The dynamics can get more complicated and somewhat interesting, but common...
Is it on the same level as broader topics like Quantum Physics, Chaos Theory, Genetics, Neuroscience, Cosmology, Philosophy?!
I am interested in doing it with certain girls for sure, VERY interested. But I think you can be crazy interested in doing something that's not so interesting...
If you really have to pee, you're really interested in peeing, is peeing interesting? Hardly

I disagree entirely.
When you have a truly intense sex and experience it on a most "human" level, and when you consider the amount of emotion, thought, and work involved in and in pursuit of sex, the ability to replicate (as in create life) and/or experience another human being on a most intimate and honest level, and all the moral and ethical ideas relating to your sexuality (a massive part of your personality and being that is carried around with you at all times [yet we really don't talk about it too heavily in our culture in spite of desires to do so]), you begin to see how deep you can go into gaining insight and wisdom on such a topic.
Not only are sex and romance prime motivators for a human being to move and live, they are the strongest connections that we can form in relation to each other and to truly experience another person.
